Can someone give me some advice as to best handle this object? As you can see at the top there's black and gray in between the mesh of the sponge. I would like to make it white to match the background. I've messed around with the Dodge tool and several other things but I can't seem to remove the black/gray without changing the tone of the rest of the photo.

Try a 'selective colour' adjustment layer, go to the 'blacks' in the drop-down and move the black slider to the left...
Just do it to the whole image, I had a fiddle and got something usable in a minute... if you want to keep going you could get something better but if you are going that far you might as well re-shoot or put it on a dark or busy background.
